5-2 Recipes Grilled Portobello Mushrooms
GRILLED PORTOBELLO MUSHROOMS

A great low calorie meal for a fast day lunch.
Serves 1 • Cook time: 15 minutes
2 flat open or portobello mushrooms (32 cals)
1 tsp extra-virgin olive oil (27 cals)
½ garlic clove, peeled and crushed (2 cals)
1 tsp chopped fresh parsley
1 medium tomato (17 cals)
salt and freshly ground black pepper
• Preheat the grill (broiler).
• Prepare the mushrooms by brushing off any soil and cutting out the stalks. Finely chop the stalks and mix in a small bowl with the olive oil, garlic and parsley.
• Cut the tomato in half, scoop out and discard all the seeds, then finely chop the tomato flesh and add to the bowl.
• Place the mushrooms open side down on a grill pan and grill (broil) for 4 minutes. Remove the mushrooms from the grill pan and turn them over. Distribute the garlic and tomato mixture evenly over the mushrooms, season with salt and pepper and grill for a further 6 minutes. Serve immediately.
