Chicken In Tomato Sauce

The tomato sauce is very versatile and can also be used on pasta and pizza. This recipe serves four but if you make the sauce for four you can keep or freeze some and use ¼ of the sauce with one chicken breast.
Serves 4 Prep time:5 minutes Cook time: 1hour 10minutes
2 cloves garlic, finely sliced
1 tsp olive oil
2 tins tomatoes, whole not chopped
2 red peppers, de-seeded and chopped
1 courgette, skinned and chopped
4 chicken breasts, skinless
